But this does not read the dongle.
Therefore any dongle would show "Blog"?
It was possible to edit the dongle's EEPROM then some SDR software's DLL would read that unique Product/Serial number.

Falconry sounds specialised, look for information there.
Speaking generally there are many systems used for birds, most store data and transmit occasionally. Some send phone signals.

The original page https://ggtoshi.at.webry.info/201406/article_6.html says there is an EEPROM connected to the RTL, I guess it needs programming.
I do not think that making SDRs is "simply" PCB design, surely firmware in a micro is required to control it? Most have arrangements for updating.

An examination of the input might show the existence of a Bias T switch.
If there is not one I'd use an external board available on Ebay etc.

An ADC will accept radio signals but limited by it's sample rate. You use a tuner (converter) to extend it's range.
I know nothing about WiFi modules and have seen nothing about modifying them.

The R820 is not a SDR chip it is in fact nothing to do with SDR simply a tuner.
The SDR chips are analogue to digital converters, the RTL chip in RTL dongles is an ADC, could have any tuner chip in front of it, or none at all. If you really feel like modding it go ahead.

A quick search (why didn't you do it?) says they are normal RTL SDRs. No extras.
